List of Ingredients
Make ahead Rice Casserole Serves 12
6 c. precooked rice (I steam mine)
1 1/2 c. shredded Cheddar cheese
1 1/2 c. shredded Monterey Jack cheese
2-16 oz. cans creamed corn
1 1/3 c. sour cream
2 bunches of green onions, sliced thinly
2-4 oz. cans diced green chilies, drained
2 tsp. dried cilantro (or 2 Tbs. chopped fresh)
1 tsp. salt
1/4 tsp. cayenne pepper
Combine all of the ingredients and pour out into a greased 3 qt.
casserole dish. Cover and chill for up to 2 days. To finish the
dish, heat the oven to 350 and bake covered for 20 minutes. Remove
the cover and bake for 20 minutes longer, until it is golden. Recipe
