Rice and Sausage Casserole

Rice and Sausage Casserole
3/4 pound pork sausage, crumbled
2 tblsp hot water
1 1/2 cups cracker crumbs
1 1/2 cups cooked rice
1 1/2 cups cooked or canned tomatoes, chopped
1/4 cup green bell pepper, chopped
3 tblsp celery leaves, minced
1 1/2 tblsp minced onions
1 1/2 tsp salt
1/4 tsp black pepper
2 tblsp butter or margarine
Brown sausage in a heavy skillet, stirring occasionally. When brown, add all other ingredients except butter. Thoroughly blend the mixture until all ingredients
are evenly distributed and blended. Grease the bottom and sides of a casserole dish and pour in the mixture.
Distribute butter over the top and bake in a preheated 350 degree oven for 35 minutes. Makess 6 servings.
