Seafood Casserole
List of Ingredients
2-3 pounds cooked shrimp (peeled and diviened)
1 cup cooked rice
1 cup colby cheese, grated
1 can cream mushroom soup
1/2 cup chopped green pepper
1 large chopped jalepano pepper
3/4 cup green onions, chopped
1/2 cup celery, chopped
1 stick butter
3 pints oysters
2 limes, sliced very thin
salt and red pepper
Mix first four ingredients together. Saute green peppers, jalepano pepper, onion and celery in 1 stick butter. Add to shrimp mixture. Boil oysters in water with salt and red pepper. When oysters curl drain and save 1/4 cup juice. Add oysters and juice to shrimp mixture. Grease pyrex dish with butter, add mixture...completely cover top with sliced limes. Cover and bake 350 for 40 minutes. Serves 6 with salad, french bread and sherbert for dessert.
