    Vidalia Onion Casserole

    List of Ingredients




    4 medium vidalia onions sliced 1/4" thick
    12 saltine crackers crushed
    1 stick margarine (4 oz.)
    Plus 1 Tbsp. margarine for greasing the casserole dish
    1 can (10-1/2 oz.) Campbell's cream of mushroom soup undiluted
    2 eggs
    1/2 to 3/4 cup milk
    1 cup shredded sharp cheddar cheese

    Melt margarine over medium heat and sauté onions until clear and tender.
    Butter a 2 qt. 8x11x2 in. casserole dish. Reserve 3 Tbsp. of cracker crumbs
    for topping and line dish with remaining crumbs. Add onions and soup in
    alternate layers until dish is full.

    Cover the top with beaten eggs and pour milk over the top. Sprinkle grated
    cheese and reserved cracker crumbs over the top.

    Bake at 350 degrees for 20-30 minutes or until brown and bubbly.

    Makes 4-6 servings.
