    American Cafe Chili

    2 tablespoons oil
    1 cup chopped onion
    1 cup chopped green pepper
    1 tablespoon minced garlic
    1 1/4 pounds chuck cubes
    1 1/4 pounds ground chuck
    2 pounds canned plum tomatoes, with juice
    1 cup tomato puree
    1/4 cup chili powder
    2 teaspoons cumin
    2 bay leaves
    2 tablespoons minced jalape?o
    4 cups chicken stock
    1 6-ounce can tomato paste
    1 1/2 tablespoons jalape?o juice (optional)

    In oil, saute onion, green pepper and garlic 5 minutes. Add
    meat. Cook until brown and crumbly. Drain fat thoroughly. Add tomatoes,
    pur?e, chili powder, cumin, bay leaves, jalape?os, chicken stock and
    tomato paste. with the cover off, simmer until thick, about 2 to 3
    hours.

    Taste and add jalape?o juice, if desired.

    Nutrients per serving: 293 calories, 14.6 grams fat (45 percent
    total calories), 35 milligrams cholesterol, 817 milligrams sodium.

    Suggestion: Serve in bowls, or for a buffet-style meal offer
    guests steamed rice, kidney or pinto beans to serve chili over. Good
    topping choices are: guacamole, sour cream, shredded zucchini, Monterey
    Jack cheese or shredded sharp Cheddar cheese.
