1 Tablespoon canola oil
6 stalks celery, diced
2 large yellow onions, diced
1 small red pepper, diced
1 small green pepper, diced
8 oz can tomato paste
24 oz can stewed tomatoes
16 oz jar of Epicurean Serrano Red & Black Salsa
5-14oz cans black beans drained
6 cups diced chicken, precooked
1 jar of Red Lion Best Batch spicy foods chilispice mix
1 teaspoon national champion Great White Shark hot sauce Heat oil over medium
heat, add celery, onion, and peppers. Cook until soft. Add all other
ingredients except for the chicken.
Bring to a boil, reduce heat & simmer 1 1/2 hours. Add the chicken & simmer for
an additional 1/2 hour.
