    Terrel Bennett’s Sweet Sausage Chili

    List of Ingredients




    Terrel Bennett’s Sweet Sausage Chili
    Based on Bob Evans, but better!

    2 lbs sausage (one mild, one hot)
    2 30oz cans light red Kidney beans
    24 oz tomato paste
    1 cup tomato puree
    5 cups water
    4 tbsp chili powder
    ½ cup sugar
    1 large onion, diced
    1 large green pepper, diced

    Crumble sausage in skillet, add onions and green peppers and cook until tender and lightly browned. Drain. In large pot, add sausage and all other ingredients except beans. Bring to boil, then simmer. Add beans. Simmer for 30 minutes. Ready to eat immediately, or even better later.

    Onions and green peppers are optional, but if you like them, use them…they’re great! Chili as it is is “mildly” hot. To make hotter, use 2 rolls of hot sausage instead of 1 mild and 1 hot, and/or use hot kidney beans. Can also add peppers.
