    Gooseberry Relish

    List of Ingredients




    Gooseberry Relish -
    2 qts. gooseberries
    1 and 1/2 cups seedless raisins
    4 med. onions chopped
    1 tablsepoon grated orange rind plus juice of orange
    3 and 1/2 cups brown sugar
    2 tablespoons mustard seed
    1 teaspoon ground allspice
    1/2 teaspoon cayenne pepper
    1/4 teaspoon cloves
    1/4 teaspoon tumeric
    2 tablespoons salt
    3 and 1/2 cups cider vinegar

    Combine all ingredients in heavy kettle, bring to boil, reduce heat
    and simmer for about 1 and a quarter hours.
    Pour boiling hot into hot pint jars, leaving 1 inch space at top of
    jar. Adjust lids and caps, process in hot-water bath 10 minutes
    counting time from when water returns to full-boil.

    Notes: My generation seems not to have made home-made jellies or
    home-processed foods. maybe others can help with specifics on these
    processes. I do know that pectin is sold in stores for making jelly
    "jell", but if you are allowing the natural fruit to make the "jell"
    the mixture must not be allowed to boil too rapidly (not all fruits
    will make jelly on their own as I remember). About a half inch of
    Parafin wax was always placed on top of the jelly in the glasses,
    then the glasses tilted slightly to allow the wax to make a good seal.
    In canning foods, the metal tops have to sink down as a signal of
    a safe process.
