    Gumdrop Cookies

    Gumdrop Cookies
    "My grandmother baked these cookies every Christmas. She would put them in the old shortening cans and freeze them. When we were at her house for Christmas, she would take out all of the cans of cookies and give them to us to take home. I remember how excited we would be. I always hoped I would have a cinnamon gumdrop in my cookie, too. Grandma has been gone for 25 years. I found her recipe in one of her old church cookbooks. After I had children, I decided to start the tradition of making those gumdrop cookies every Christmas. Of course, today we do not have the shortening cans (paper has replaced them), but I hope I have started a Christmas tradition for my daughters."

    1 cup brown sugar
    1 cup white sugar
    1 cup butter
    2 eggs
    2 1/2 cups flour
    1/2 teaspoon salt
    1 teaspoon soda
    1 teaspoon baking powder
    2 cups oatmeal
    1 cup gumdrops, cut in pieces
    1 cup coconut

    Cream sugars and butter. Add eggs. Mix. Add dry ingredients and oatmeal. Mix. Stir in gumdrops and coconut. Drop by teaspoonful on greased cookie sheet. Bake at 375 degrees for 12 minutes. Cool on wire baking racks. Store in airtight containers. (To keep cookies from drying out, put a slice of bread at the bottom of each container before putting the cookies in.)
