Meringue Cookies
List of Ingredients
1/4 pound butter
1 egg white
1/2 cup sugar
1/4 cup finely chopped nuts
1 egg yolk slightly beaten
2 tablespoons sugar
1 cup cake flour
1/4 teaspoon cinnamon
Cream the butter and sugar until light and smooth. Stir in the egg yolk and mix
thoroughly. Sift flour twice. Measure. Add to the batter and mix well.
Grease
and flour a 9x12 cake pan. Spread dough very thin using a wet knife if
necessary.
Beat egg white until stiff. Spread over the dough, top with mixture of finely
chopped
nuts, sugar and cinnamon, Bake in a 400 degree oven until golden brown in
color.
Cut immediately into diamond shapes. This must be cut very quickly because
this cookie cools and becomes crisp rapidly.
