    List of Ingredients




    Cottage Cheese

    1/2 gal. skimmed milk
    1/2 rennet tablet
    6 tbs. whole milk
    1 tbs. cold water
    1-2 tsp. salt
    1-1/2 tsp. vinegar

    Sour milk?. . . well kind of . . .but soooo good,
    and good for you. It can be used in many ways also.
    Milk and vinegar into double boiler over hot water
    then heat slowly to 70-75 degrees. Remove from heat
    Dissolve rennet in water and stir into the warm milk.
    Cover and set aside for 12-16 hr. In 12 hr. you should
    be able to see some whey on the surface. Tilt the pan,
    you should see the mixture crack or break. If you don't
    see this, let it stand a few hours longer. Then line a
    colander with cheese cloth, double thick. Pour the curd
    into the colander, gently toss and stir the curd to
    remove the whey. Add the salt at this time. If you like
    it creamed, add 2 or 3 tbs. of cream, chill and serve.
