Lebanese Rice Pudding
Makes 4 servings
Preparation time: 5 minutes
Cooking time: about 40 minutes
1/4 cup white rice
3 cups 2 percent milk
1 1/2 cups granulated sugar
1 scant teaspoon rose water (available at farmers and international markets)
1/2 tablespoon crushed pistachio nuts
Bring 1/2 cup water to boil. Boil rice until tender, about 20
minutes. Add milk. Bring to boil. Remove from heat. Add sugar. Stir
to mix well. Refrigerate until ready to serve. When ready to serve,
add rose water. Divide among serving dishes and top each with some of
the pistachio nuts.
