Orange Chocolate Ravioli
List of Ingredients
Pasta:
3 whole eggs
3 egg whites
2 oz orange juice concentrate
3 tsp honey
Grated zest from 3 oranges
2 tsp salt
42 oz durum flour
Filling:
12 oz ricotta cheese
4 oz dark chocolate, melted
6 oz pistachios, toasted and chopped
Garnish:
Powdered sugar
Grated orange zest
Cooking Instructions
To make filling: Warm chocolate in a double broiler or saucepan and slowly add melted chocolate to the ricotta; finish with toasted chopped pistachios and mix together.
To make ravioli: Combine eggs, orange juice, honey, salt, and zest in a small electric mixing bowl and slowly add durum flour, 4 oz at a time, until all of the flour is worked in. After initial pasta is made, a mixture of 1/2 semolina and 1/2 durum flour needs to be worked into the pasta by hand until the pasta has dried out enough to roll (pasta should be elastic but not damp).
Roll pasta out into thin sheets. Use a round cutter to mark the size and placement of each ravioli. Set the filling and dampen the edges by brushing with an egg wash (beaten egg yolk). To finish lay a thin sheet of ravioli pasta over the filled circles and then punch out the raviolis, crimping the circular edges by hand until they are sealed.
Deep fry ravioli in canola oil until done (about 5 minutes). Blot excess oil on paper towels; sprinkle with powdered sugar and garnish with orange zest.
