Peaches and Cream Cobbler

PEACHES AND CREAM COBBLER
Vanilla Crust Ingredients:
3 5/8 oz. package instant vanilla pie and pudding mix
3/4 cup self-rising flour
1/2 cup milk
1 large egg
3 Tablespoons softened butter
Beat all ingredients together well and spread into the bottom of a greased 2 to 2 1/2 quart baking dish (8" X 12" flat baking pan will work, too).
Peaches And Cream Filling:
1 lb 13 oz. can drained (reserve syrup-set aside) sliced peaches
8 oz. softened cream cheese
1/2 cup granulated white sugar
1 teaspoon ground cinnamon
1 teaspoon granulated white sugar
Spread the drained peach slices over the vanilla crust. Beat together the cream cheese and 1/2 cup granulated white sugar with 3 Tablespoons of reserved peach syrup, this step should take about 2 minutes with your electric mixer. Sprinkle with mixture of ground cinnamon and granulated white sugar*. Bake at 350F for 35 minutes and serve warm.
*If you like a sweeter topping, use 1 1/2 teaspoons granulated white sugar and only 1/2 teaspoon of ground cinnamon.
