    Pflaumenkuchen Peach/Plum Kuchen

    List of Ingredients




    Sift together:

    1 cup all-purpose unbleached flour
    2 Tablespoons granulated white sugar
    1 teaspoon baking powder
    1/4 teaspoon salt

    Place these ingredients in a mixing bowl. Cut in 3 Tablespoons of butter until mixture resembles coarse crumbs.

    Beat in:

    1 large egg
    1/4 cup milk
    1 teaspoon vanilla extract

    Add to flour mixture and beat for 1 minute; mixture will be stiff. Spread batter evenly into a greased 9" springform pan.

    Arrange in a circular pattern, alternating the fruit:

    2 cups peeled, pitted and thinly sliced
    fresh peaches
    2 cups peeled, pitted and thinly sliced
    fresh plums

    Mix 4 Tablespoons of granulated white sugar with 4 teaspoons of ground cinnamon and sprinkle this mixture evenly over the peaches and plum kuchen. Bake at 400F for 25 to 35 minutes or until cake is done and fruit is tender. Cool for 15 minutes in pan before slicing.
