Strawberry Blintz Omelets
List of Ingredients
1 basket (about 2 cups) strawberries
2 tablespoons vanilla sugar (recipe at bottom)
3 oz. cream cheese, softened
1 tablespoon milk or half-and-half
pinch ground nutmeg
3-4 tablespoons light brown sugar
3-4 tablespoons toasted, sliced almonds
Hull strawberries, reserving a few with leaves for garnish (if you want); cut hulled berries in halves. Place in a bowl, mix lightly with vanilla sugar, and let stand at room temperature while preparing filling and omelets.
In a small bowl beat cream cheese with milk and nutmeg until fluffy.
In a large skillet prepare 3 or 4 plain omelets.
Use a third (or fourth) of the cream cheese mixture and about 1 tablespoon of the brown sugar and place in the center of the omelet, then fold omelet flaps over.
Serve omelets on warm plates, spooning strawberries over and sprinkling each with about 1 tablespoon almonds. Serve immediately. Serves 3 (or 4).
Vanilla Sugar
Half a vanilla bean
1/2 cup sugar
Embed half a vanilla bean in sugar in a covered jar for at least 24 hours. Replenish sugar as you use vanilla sugar to sweeten fruits.
