    EASY SHRIMP SANDWICHES
    Serves: 4

    INGREDIENTS
    - 2 ounces medium cooked shrimp, cut into 1/2" pieces
    - 1/2 cup grated fat-free mozzarella or cheddar cheese
    - 2 tablespoons fat-free mayonnaise
    - 1 tablespoon minced green onion
    - 2 English muffins, cut in half and toasted

    DIRECTIONS
    1. Mix shrimp, cheese, mayonnaise and green onion.
    2. Spread an equal amount of shrimp mixture on each toasted
    muffin half.
    3. Broil or microwave until cheese begins to melt.
