    MONTE CRISTO SANDWICHES
    Serves: 2

    INGREDIENTS
    - 1 tablespoon each: fat-free mayonnaise and catsup
    - 2 ounces roasted chicken breast, thinly sliced
    - 2 thin slices (3/4 ounce each) fat-free Swiss cheese
    - 4 slices rye bread
    - 1 egg, beaten
    - 1/4 cup nonfat milk

    DIRECTIONS
    1. Mix mayonnaise and catsup, then spread on 2 slices of bread. Top with
    chicken, then cheese. Cover with the remaining bread slices.
    2. Mix egg and milk. Dip sandwiches into egg mixture.
    3. Then brown on both sides, over medium-high heat, in a large, heavy
    skillet sprayed with nonstick spray.
