    PITA BREAD WITH CRAB FILLING

    Makes: 4 Sandwiches (1 Serving = 1 Sandwich)
    Source: "Gourmet Inspirations"

    INGREDIENTS
    - 1 cup celery, chopped
    - 10 green or black olives, sliced
    - 6 scallions, chopped
    - 2 Tablespoons bread crumbs
    - 1/4 cup non-fat yogurt
    - 1/4 cup non-fat mayonnaise
    - Pepper to taste
    - 1 - 6 ounce can crab meat (rinse well) or 1 - 4 ounce can shrimp
    - 2 pieces pita bread, cut in half
    - 4 teaspoon Parmesan cheese, grated

    DIRECTIONS
    1. Combine first seven ingredients in large skillet, stirring over medium heat
    until
    mixture is bubbly. Reduce heat, add crab and continue simmering 3-5 minutes.
    2. Spoon into heated pita bread halves. Sprinkle each with 1 teaspoon Parmesan.
