    Fresh Herb Omelet
    KMOV-4 (St. Louis)

    2 tsp. dry vermouth
    1 scallion (chopped fine)
    2 eggs
    2 oz. clarified butter
    2 button mushrooms (sliced thin)
    1 tsp. basil (chopped fine)
    1 tsp. capers
    1/4 teaspoon salt
    1/4 tsp pepper
    1/2 tsp. fresh thyme (chopped fine)
    1/2 tsp fresh parsley (chopped fine
    1/4 cup shredded cheddar

    Sauté mushrooms and scallions in clarified butter.

    Meanwhile, whip eggs with dry vermouth, salt, pepper and fresh herbs.

    Add capers and pour mixture into smoking hot skillet brushed with
    clarified butter.

    Cook 30 seconds the flip omelet.

    Spoon vegetables and cheese over omelet, fold in half and serve.
