    Delmarva crabcakes

    List of Ingredients




    Delmarva crabcakes

    1 pound crab meat (preferably lump, pick through
    for shells)
    crab boil seasoning (start with 1 tablespoon, increase
    to taste)
    2-3 tablespoons mayonnaise
    1 tablespoon Worcestershire sauce
    1 tablespoon chopped fresh parsley
    1 egg
    2 tablespoons (or less) bread crumbs-use only to bind-
    NEVER as a filler

    Mix all the ingredients together in a bowl until consistency is moist
    enough yet will hold together to form cakes- put the formed cakes in
    the refrigerator to set- at least 30 to 45 minutes-most often the
    cakes are deep fried, but you may also saute or broil- watch carefully
    until cakes turn a soft, golden brown, turn and cook to the same pale
    golden brown on the other side- serve with tartar or cocktail sauce-
    fresh picked corn on the cob, sliced beefsteak tomatoes and, if you
    are very lucky, some steamers (steamed clams and broth) -true Eastern
    shore bounty!
