Marinated Shrimp and Jalapeños

Marinated Shrimp and Jalapeños
2 tablespoons olive oil
2 pounds shrimp, shelled and deveined (20 to 24 per pound)
1 large onion, sliced
3 tablespoons canned jalapeños, cut into thin strips
1/2 cup cilantro leaves, chopped
Salt to taste
Juice of 1 lime
Preheat oven to 400 degrees. Mix together all ingredients except lime
juice. Place in 9-by-13-inch baking dish. Bake for 20 minutes.
Remove from oven and squeeze fresh lime juice over it.
Serve hot or cold with lime wedges or lime slices and a bowl of fresh
tortilla chips. Or serve directly from the oven over cooked pasta. Or
chill well and serve on top of crispy bean and cheese chalupas. Makes
12 to 15 appetizer servings.
