Shrimp Stuffed Zucchini
List of Ingredients
4 medium zucchini
3 Tbsp. lemon juice
1 cup shrimp, cooked/chopped
3 Tbsp. Italian dressing
salt/pepper
1/4 cup grated cheese
2 medium tomatoes, cut wedges
1 can olives, pitted
1/8 tsp. garlic powder
Recipe
Scrub zucchini very well with vegetable brush. Place in a large saucepan, add just enough cold water to cover. Bring to boil, reduce heat and simmer for 10 minutes or
until tender.
Drain zucchini, let cool and then cut in half lengthwise; scoop out and reserve center. Brush cut side of zucchini with lemon juice. Chop zucchini centers coarsely. In
small bowl, combine chopped zucchini, shrimp, Italian dressing, garlic powder, salt and pepper. Fill zucchini with shrimp mixture. Sprinkle some of the grated cheese,
refrigerate at least 1 hour before serving.
Arrange tomato wedges and olives around zucchini for garnish. Pass more Italian dressing. Serves 8
