Spicy Fried Oysters

Serves 4
24 large oysters (1 pint shucked)
2 eggs
1/2 cup milk
Spiced Flour:
1-1/2 cups all purpose flour
1/2 cup fine cornmeal
1 Tbsp. salt
1 Tbsp. file powder (ground sassafras)
1 Tbsp. paprika
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. dried thyme
1 tsp. cayenne
1 tsp. finely ground black pepper
About 2 cups oil, for frying
1. Shuck the oysters over a strainer set over a bowl, reserving
the liquid. If you use shucked oysters, drain them in a strainer
over a bowl, then pick through them, removing any bits of shell.
2. Combine the eggs, milk and reserved oyster liquor in a
mixing bowl and whisk until smooth. Combine all of the spiced
flour ingredients in another bowl and mix well.
3. Pour enough oil to reach a depth of 1 inch in a skillet or
electric frying pan and heat to 350 degrees. Using 2 forks,
dip the oysters in a the milk mixture, then the spiced flour,
then the milk mixture again, then the spiced flour again, shaking
off the excess.
4. Fry the oysters until golden brown, turning with a wire
skimmer, 1 to 2 minutes. Work in several batches so as not
