Apple Enchiladas

Apple Enchiladas
1 can apple pie filling
8 flour tortillas
1 cup sugar
1 teaspoon cinnamon
2 cups water
1 stick margarine (I prefer Blue Bonnet)
Preheat oven to 350 degrees. Empty can of apple pie filling into small bowl. Cut apples into small pieces. Place about a heaping tablespoon of apple pie filling down center of flour tortilla, roll up and place in 9x13x2-inch glass baking dish. Continue until all 8 tortillas are used up. Melt margarine in 1 cup water, use other cup of water to rinse filling can and small bowl, then pour into pot with water and margarine. Sprinkle 3/4 cup sugar over the enchiladas, then pour margarine and water mixture over the top of the enchiladas.
Sprinkle the other 1/4 cup sugar and teaspoon cinnamon on top of the enchiladas. Cover dish with foil and bake for approximately 30 minutes or until liquid becomes thick.
To make dish more attractive, place three enchiladas open end against side of dish with one enchilada lengthwise on opposite side of dish and repeat in reverse on opposite end of dish.Recipe
