Eipfannekuchen [German Egg Pancakes]
List of Ingredients
Eipfannekuchen (recipe for one portion - can make up to four portions in a large frying pan)
ingredients:
1 egg
1 Tbs Bisquick or other biscuit/pancake mix
1tbsp milk
1 Tbs butter
Melt the butter in a small frying pan. Beat or blend the rest of the ingredients until bubbles form. Pour into pan. Turn when mixture sets and pancake holds together. Serve immediately.
Auntie used to simply serve sprinkled with granulated sugar. My mother tends to serve with syrup, and usually rolls the individual pancakes. My husband likes to spread with jam and roll up the pancakes. When I'm lazy and make 4 at once in a large pan, I quarter the pancake and turn the quarters individually.

It was actually adapted by my Great Aunt. Auntie (absolutely everyone called her that) was a delightful woman and a great cook. Her mother (my Great Grandmother) was from a little town in northern Germany, so many of Auntie's recipes were German. When I was little we lived in an extended family which included my Latvian Grandfather and Auntie, who raised my mother after her mother died from complications of the 1918 flu epidemic. (As a result, my mother never learned to cook until Auntie became ill.)
