    Genie's Grandmother's Egg Custard

    List of Ingredients




    1 9 inch unbaked pie shell
    3 eggs, beaten
    3/4 cup white sugar
    1/4 tsp salt
    1 tsp vanilla extract
    1 egg white
    2 1/2 cups scalded milk
    1/4 tsp ground nutmeg

    Mix together eggs, sugar, salt and vanilla, stirring well. Gradually blend in the scalded milk until completely incorporated. Brush inside the bottom and sides of pie shell with egg white to prevent a soggy crust. Pour custard mixture into pieshell and sprinkle with nutmeg. Bake in a preheated 400 degree oven for 30 to 35 minutes or until a knife inserted near the center comes out clean. Place on a rack to cool before cutting. Refrigerate leftovers (if there are any!!!).
