Grammie's Watermelon Rind Pickles
3 lbs.watermelon rind
5 cups of sugar
2 cups vinegar
1 cup water
1 lemon
1 ounce Whole Pickling Spice in cheesecloth bag.
Remove all pink pulp and green skin from watermelon rind and cut in small pieces. Let stand overnight in brine made with 2 TBS of salt to 1 quart of water. Drain, cover with fresh water and boil until tender. Mix sugar,vinegar and water. Add lemon,cut into slices and bag of pickling spice. Boil 5 minutes and add watermelon rind and
continue cooking until transparent. Remove spice bag-put rind and liquid in Sterilized jars.
