Grandma Andersen's watermelon pickles
List of Ingredients
mine is not quite as hard, but still involved. Again, cut away the rind and ALL
the pink........boil in salted water until clear......drain
Mix:
4 1/2C sugar
3C vinegar boil these for 5 min
1 1/2t salt
3 cinn stick
soak the watermelon rind in this sugar brine for 3 days.....preboiling the brine each day
(taking out rind each time)
after 3 days put in pint jars and can according to your canner
this is my Grandma Andersons recipe......she was a good Swede and a great cook.....enjoy!
