Grandmas Kraut
List of Ingredients
Grandmas Kraut
1 one lb. package of sauerkraut (in the deli section
of most supermarkets)
4 country style pork spareribs
1/2 teaspoon caraway seeds
24 oz. beer or ale
Salt and pepper to taste
Recipe
Cut spareribs into serving size pieces. Sear in heated cast iron skillet, using the rendered fat from the ribs, until golden brown. Place sauerkraut into large ovenproof pan and sprinkle with caraway seeds and salt and pepper. Remove ribs from skillet and arrange on top of kraut. Deglaze skillet with some of the beer, scraping bottom to get all the "goodies", and pour this over the ribs. Add the remainder of the beer and cover and bake in a 350 degree oven for 90 minutes. (Check to make sure the ribs are covered with beer, if necessary, add more.) Serves 4

When I was young (before dirt) we had to help make sauerkraut every year, a tedious task, but worth every minute spent when my Grandmother made the first batch of "fragrant" Kraut with pork. She always served it over mashed potatoes or oven browned potato quarters. Delicious.
