Honey Cake
List of Ingredients
Honey Cake
1 Cup Sugar
1/2 Cup Oil
1 1/4 C honey
3 eggs
2 tsp baking soda
1 tsp baking powder
1 whole orange grated
1 whole lemon grated
1 Cup of either sweet red wine or sweet grape juice
1/2 Cup raisins (my mother uses yellow, I like
black-your choice)
3 1/2 Cups flour
Mix all ingredients except flour together and then add flour until
well mixed. Bake in a large rectangular pan that has been well
greased. I use a 9X13, my mom uses a disposable lasagna pan. Just
make sure you grease pan very well, it is a sticky batter. Bake in
350F degree oven about 1 1/4 hour or until brown and cake tester comes
out clean. Don't worry if the raisins sink to the bottom; neither my
mother or I have ever been able to figure out how to prevent that. It doesn't spoil the
taste of the cake if the raisins are on the bottom. Cut the cake in
triangular wedges and serve plain.
