    Joan's Mom's Pizzelle's

    List of Ingredients




    Mom's Pizzelle's:
    ( thin, crispy, waffle-type buttery cookies )

    2 sticks butter ( absolutely no substitution as real butter is chiefly responsible for the rich flavor )
    6 large eggs
    1 1/3 cups sugar
    3 to 4 cups flour ( start with 3 cups )
    1/4 tsp. salt
    2 tsp. baking powder
    2 tsp. real vanilla extract ( or lemon, or anise etc. )
    Optional Variations:
    1/4 cup baking cocoa
    or
    1/4 cup finely chopped nuts

    Heat your pizzelle iron ( mine has an indicator light but usually a good 5 to 10 minutes is sufficient for
    preheating ) Melt butter ( I use the microwave ) and let cool slighly. In a separate bowl beat eggs with sugar with an electric mixer until light and lemon colored. Beat in melted butter and flavoring. In another bowl combine flour, baking powder and salt. If desired for a chocolate version, sift in the baking cocoa. Add and mix in enough flour mixture slowly but thoroughly with electric mixer to make a thick spoonable sticky batter ( the consistency will not be pourable but rather a soft spoonable mixture.) Fold in the nuts if desired-

    Okay, here is the tricky part of the whole procedure:
    Spoon about one scant Tbs. ( I may use my finger to remove the batter from the spoon ) of the batter in the center of each pizzelle depression. I have the pizzelle maker that has 2 individual sections. Quickly close cover tightly. In less than 30 seconds, or more, the cookies will have spread to the pizzelle
    shape and be golden brown. Quickly remove pizzelle ( I use my fingers ) and place immediately on a rack to cool. Once cool, store air tight. If desired one may sprinkle the cookies with powdered sugar. ( The flavored powdered sugars add a nice touch ). Makes several dozen. Plan on about 45 minutes to hour to make the entire batch from start to finish.
    In my opinion, the flavor of these tastes best the following day.
