    Lemon Ice

    List of Ingredients




    1820'S Recipe: WATER ICE LEMON

    3 cups boiling water
    2-1/2 cups sugar
    juice from 5 lemons
    finely grated rind of 1 large lemon
    6 cups ice water
    1/4 tsp. vanilla
    1 cup egg whites

    Mix the boiling water with the sugar in a large
    heavy saucepan, set over high heat, and boil,
    uncovered, without stirring for 10 minutes.
    Meanwhile combine lemon juice, lemon rind, ice
    water and vanilla in a very large heatproof
    mixing bowl. After syrup has boiled 10 minutes
    stir in lemon juice mixture.
    Beat the egg whites till they form soft peaks,
    them beat into lemon mixture. They will not beat
    together very well, but will after frozen a while.

    Pour into 2 large shallow 13x9x2-in. pans. Set in
    freezer. Freeze till mushy, about 1-1/2 hours. Mix
    with electric mixer 'til fluffy. Pack into freezer
    cartons and return to freezer. Freeze 'til firm.

    Fluff it up with a fork before serving.
