Sis in law's Mom in law's coleslaw
List of Ingredients
My sister in law found it written on a scrap of paper tucked in her deceased mother in law's cook book. It is the best the family has ever tasted.
In a small heavy pot, put:
1/4 cup vinegar (Cider vinegar works well)
1/4 cup granulated sugar
2 eggs
1/2 teaspoon salt
1/2 teaspoon prepared mustard (I use country Dijon)
1 teaspoon butter
Recipe
Mix well, and cook over low heat, stirring constantly, till mixture comes to a boil and thickens. Set aside to cool while you:
Chop 1 medium head of cabbage and shred 1 large carrot and place in large bowl.
Add 2 cups mayonnaise to the mixture in pot. Blend well. Pour over cabbage & carrot in bowl, toss well to coat vegetables with dressing. Cover bowl and refrigerate for at least an hour before serving

(This is really good on corned beef sandwiches)
