Mrs. Carter’s Soft Gingerbread

Mrs. Carter’s Soft Gingerbread
3 eggs, slightly beaten
1 1/2 cups sugar
1 cup molasses
1 cup cream
3 cups flour
1 tsp baking powder
1/2 tsp soda
1 tsp ginger
1 1/2 tsp each cinnamon, cloves and nutmeg
• Combine eggs, sugar, molasses and cream. Beat until well blended. Combine dry ingredients; add to egg mixture and beat until smooth.
• Bake in 13-by-9-inch greased and floured pan at 325 degrees for 35 to 40 minutes or until done.

Oatlands
This recipe comes from historic Oatlands Plantation, a Greek Revival mansion built in 1804 by George Carter, great-grandson of colonial Virginia’s legendary Robert “King” Carter. Mary Carter married George’s grandson and made this gingerbread in the 1880s. Oatlands today is a museum-home of the National Trust for Historic Preservation, attracting thousands of visitors annually to view its buildings and four-acre formal garden.
