    Spoon Bread

    4 eggs, divided
    4 cups sweet milk
    1 cup white cornmeal
    1/2 cup butter, melted, cooled
    2 Tbsp. sugar
    1 tsp. salt

    • Beat 4 egg whites until stiff. Set aside.
    • Heat milk just to boiling point. Still on heat, using whisk, stir in cornmeal until smooth.
    • Remove from heat, immediately beat in butter, sugar and salt, then the beaten egg yolks.
    • When smooth, fold in stiff egg whites.
    • Spoon into buttered casserole.
    • Place casserole on middle rack of oven heated to 350¡.
    • Place a shallow pan with 1 inch hot water in bottom rack.
    • Bake for about 45 minutes, until light brown and puffed.

    This early American recipe is one of those things they’ve been making in the back woods forever. It may be the best spoon bread you’ve every tasted
