Stratford Hall Cornbread
1 cup cornmeal
1/2 teaspoon salt
1 cup flour
2 eggs
4 tsp. baking powder
1 1/2 cup milk
2 Tbsp. sugar
4 Tbsp. melted shortening
(optional)
• Sift dry ingredients. Add eggs and milk. Add shortening and stir.
• Grease heavy skillet and pour batter in; bake 25 minutes at 400, or until browned and pulling away from the edges of the pan.
• Tip: I melt the shortening in the skillet; this greases it and also preheats it, which encourages a crust on the bottom. I think bacon fat would have been used in the original recipe. For the cholesterol-conscious diner of today, I suggest less flavorful but more healthful salad oil.

Stratford Hall, east of Fredericksburg, is the boyhood home of Robert E. Lee. The Confederate commander made a stop in Leesburg, at a home still standing on King Street, on his way north to Maryland during the Antietam Campaign.
This is a quick easy recipe off the bag of cornmeal that they grind and sell at Stratford Hall. It is great out of the oven.
