Great Balls of Fire
List of Ingredients
1 can (12 oz.) whole jalapeno chiles
1 1/2 cups shredded sharp Cheddar cheese (6 oz.)
1 cup buttermilk baking mix
1 pound regular or spicy bulk Italian sausage
1 tsp. Johnny Ciao's Country Herbs (or 1/2 tsp. rosemary and 1/2 tsp. sage)
1/2 cup plain fine bread crumbs
Recipe
Preheat oven to 400F (205C). Drain chiles and cut off stems. Rinse chiles and remove seeds. Carefully stuff chiles with cheese, then set aside.
Thoroughly blend baking mix with sausage and any leftover cheese in a medium bowl. Form a large ice cream scoop-size ball from sausage mixture, then place a chile in
the center, wrapping mixture around chile. Repeat with remaining sausage mixture and chiles.
Mix herbs and bread crumbs in a shallow bowl. Coat each chile with crumb mixture. Arrange chiles in a large baking pan. Bake 15 minutes or until golden brown.
