    Roma Hot Sauce

    List of Ingredients




    About 7 Roma tomatos
    1/2 a slice of onion
    a clove of garlic
    2 fresh serrano peppers (if you can't
    find those hopefully you can get fresh jalapenos- not canned!)

    Boil all this until the skins of the tomatos start to pop
    (about 5 min.)Drain in collinder until cool. Peel the tomatos.

    Now you need a handful of fresh cilantro in a cuisinart
    with a tsp. of salt.
    Put the cool tomato, etc. in the processor w/cilantro and
    pulse til everything is blended but not liquid.
    Transfer to a bowl and
    add about 2 tsp. lemon juice and about 1 tsp. honey and
    mix with spoon.

    I use this with Velveeta to make Chili con Queso,
    in tacos, with dipping chips and with cheddar in a warm tortilla.
