    Chocolate Peppermint Cooler

    List of Ingredients




    Chocolate Peppermint Cooler
    Crust:
    4 tablespoons oleo
    1 1/2 cups vanilla wafer crumbs

    Melt oleo and mix with the vanilla wafer crumbs. Press mixture into a 9x9 glass pan.

    Filling:
    1 quart peppermint ice cream

    Cover crust with 1 quart softened peppermint ice cream. Place crust with softened ice cream in the freezer while mixing the following:

    Topping:
    Melt over low heat:
    2 squares of unsweetened chocolate
    1/2 cup oleo

    Mix oleo and chocolate until well blended.

    Add the following to the mixture of oleo and chocolate:
    1/2 cup chopped pecans
    1 teaspoon vanilla
    Fold in 3 stiffly beaten egg whites

    Remove pan from freezer and spread topping on ice cream. Sprinkle nuts or crushed peppermints on top of topping.
