Margarita Ice Cream Dessert

The tart flavors of Margarita and lime with a salty pretzel crust combine for a refreshing dessert.
1 1/4 cups crushed pretzel
2 tbsp. sugar
1/3 cup butter or margarine, melted
1/2 gallon Byerly's Vanilla Ice Cream, softened
1 (10 oz.) can frozen Bacardi, Margarita concentrate, thawed
1 (11 1/4 oz.) jar lime curd
- fresh lime twists or slices, (optional)
- sliced strawberries, (optional)
In medium bowl, combine pretzels, sugar and butter, reserving 2 tbsp. for topping. Press into bottom of 9" springform pan. Bake in preheated 375� oven 8 min. Cool. In large bowl, blend ice cream and margarita concentrate until thoroughly combined. Spoon into cooled crust.
Freeze until nearly firm, (about 60 min.). Stir lime curd; randomly drop tablespoonfuls over ice cream. Using knife, swirl lime curd into ice cream 1" deep, for marble effect. Sprinkle with reserved crumbs. Freeze, covered, until firm overnight.
To Serve: Run thin, sharp knife around edge of pan; release side of pan. Cut into wedges. Garnish with lime twists and serve with sliced strawberries, if desired. Serves 12.
