    Jalapeno Jam

    List of Ingredients




    4 or more jalapeno peppers
    1 1/3 cups canned apple juice
    2 tblsp vinegar
    4 cups white sugar
    1 pouch Certo liquid pectin
    Green food coloring as desired

    Using rubber gloves, seed and chop peppers. Place in a large saucepan with apple juice and vinegar. Stir in sugar and mix well. Add 1/2 tsp butter or
    margarine and bring to a full rolling boil over high heat, stirring constantly. Pour Certo into the pan and add food coloring. Bring to a full rolling boil, stirring
    constantly. Remove from heat and skim off any foam.

    Fill 4 pint or 8 half pint jars immediately to 1/8 inch from top. Wipe jar rims and threads and cover quickly with lids. Screw on bands tightly. Process in
    boiling water bath for 15 minutes. (Or invert jars for 5 minutes, then turn upright. After one hour, check seals.
