    Strawberry-Basil Jam

    List of Ingredients




    Strawberry-Basil Jam

    4 cups strawberries, hulled and sliced
    1/2 cup sugar
    Dash rose water; see cook's notes
    1/4 cup orange juice
    2 large fresh basil leaves, minced
    Pinch ground black pepper
    Pinch salt

    Cook's notes: Rose water is a distillation of rose petals with an
    intensely perfumy flavor and fragrance. Often it's in dark blue
    bottles and is sometimes stocked in supermarket liquor sections.
    1. Combine all ingredients in large, deep skillet. Cook on medium
    heat, tossing ingredients frequently, until strawberries start to
    soften.
    2. Remove from heat and mash with fork. Serve with biscuits. If not
    using immediately, refrigerate, well-sealed, up to 3 days.

    Yield: About 3 1/3 cups

    Nutritional information (per 1-tablespoon serving): 11 calories, no
    protein, 2.8 grams carbohydrates, no fat, no cholesterol, 6
    milligrams sodium
