Banana Rum Parfait

List of Ingredients
- 3 oz orange flavor gelatin
- 1 cup boiling water
- 1 cup ice cubes
- 1 medium banana, sliced
- 1 cup [1/2 pt] vanilla ice cream
- 1 tbs light rum or 1/4 tsp rum extract
Instructions
- Dissolve gelatin in boiling water. Measure 1/2 cup add ice cubes and stir constantly until gelatin begins to thicken [3 to 5 minutes approx] Remove unmelted ice. Add banana and spoon into parfait glass.
- Blend ice cream and rum into remaining gelatin. Spoon over clear gelatin in glass. Chill until set [approx 30 minutes] Garnish with whipped topping if desired.
