Creamy Peach Parfait

List of Ingredients
- 3 oz cream cheese, softened
- 2 tbs sugar
- 1 tbs milk
- 3 oz peach gelatin
- 1 cup boiling water
- 2 cups ice cubes
- 1 cup diced peeled fresh peaches
- 1/4 cup raspberry jam or preserves
Instructions
- Combine cream cheese, sugar and milk in bowl. Blend well. Set aside.
- Dissolve gelatin in boiling water. Add ice cubes and stir gently until gelatin begins to thicken [3 to 5 minutes] Remove unmelted ice. Fold in peaches. Spoon half of fruited gelatin in 6 parfait glasses.
- Carefully spoon cheese mix into glass over gelatin. Add layer of preserves. Top with remaining gelatin mix. Chill until set [approx 2 hours]. Garnish with whipped topping and fruit [opt].
