Molded Chef's Salad
List of Ingredients
- 6 oz lemon or lime gelatin
- 2 tsp salt
- 2 cups boiling water
- 1 cup cold water
- 3 tbs vinegar
- 3/4 cup thin cooked ham strips [approx 4 oz]
- 3/4 cup thin Swiss or American Cheese strips [approx 4 oz]
- 1/4 cup fine sliced scallions or red onion
- 1/2 small green pepper, cut in strips
Instructions
- Dissolve gelatin and salt in boiling water. Add cold water and vinegar and chill until thickened.
- Fold in remaining ingredients. Pour into 5 cup mold or metal mixing bowl. Chill until firm [at least 6 hours or overnight] Unmold and garnish with lemon and tomaot wediges if desired [plus fancy lettuce works too]

Makes 4 1/2 cups or 4 entree servings
