    Pastel Marshmallows


    List of Ingredients


    • 1 package [3 oz] gelatin, any flavor
    • 1/2 cup boiling water
    • 3/4 cup sugar
    • 3 tbs light corn syrup
    • Confectioners sugar


    Instructions


    1. Dissolve the gelatin in boiling water in saucepan over very low heat. Add sugar. Cook and stir just until sugar is disssolved [DO NOT BOIL].
    2. Blend in corn syrup. Chill until slightly thickened. Beat at high speeds [you will need to use electric mixer] until it is thickened and will stand in soft peaks [about 8 to 10 minutes]. Pour into 8 or 9 inch square pan [line it on sides and bottom with waxed paper greased with butter] Chill overnight.
    3. Turn firm mix onto board heavily dusted with confectioners sugar. Carefully peel off wax paper and then dust heavily with sugar. Cut into 1 inch squares or shapes using small cookie cutters dipped in sugar. Roll cut edges in sugar. Store tightly covered in Frig.
