Two Way Salad and Dessert

Two salads and two desserts..
List of Ingredients
- 3 oz orange gelatin
- 1 cup boiling water
- 1/2 cup plain yogurt
- 1/2 cup carrots, shredded
- 2 tbs fine chopped green peppers
- 1/2 cup drianed canned apricot halves
- 1/2 cup vanilla ice cream
Instructions
- Dissolve gelatin in boiling water. Measure 1/2 cup and chill until slightly thickened. Blend in yogurt. Fold in carrot and pepper and pour into two individual molds. Chill until firm. Unmold and garnish with scallion and carrot curls [opt]
- Meanwhile:place apricot halves in 2 indvidual dessert dishes. Blend ice cream into remaining gelatin. Pour over apricots and chill until set. Garnish with whipped topping and additional fruit [opt].
Final Comments
Great with hamburgers or meatloaf
