One Ham steak, sliced thin
2 - 3 tbs butter
1 - 2 tbs dijon mustard
1 - 2 tbs green peppercorns
(Firegirl note: I am sure I am omitting other
ingrediants)
Pound the ham steak until approximately
½ inch thick. Saute it in 1 - 2 tbs of the
butter. When cooked, remove the ham
and add the remaining butter and other
ingredients. Stir until emulsified and serve
over the ham.
Lower Fat Alternative
1 Ham Steak
2 - 3 tbs unsalted chicken stock
2 tbs white wine
¼ cup dijon or other country style brown
mustard
2 tbs green or black peppercorns
salt and pepper to taste
1 tsp corn starch
1 tsp water
Recipe
Grill the ham steak. While the ham is
grilling, combine the next 5 ingredients in
a sauce pan and simmer. When the ham
is almost done, bring the sauce to a high
boil, combine the corn starch and water
into a paste, and mix the paste into the
sauce. Serve with the ham.
As spicy food addicts, we can use chilies
and mustard to replace the fat to provice
flavor to meals. This concept can be used
on almost any meat or vegetable.
