BAKED Pork and Sauerkraut

LOTS of mashed potatoes as a side! YES HOMEMADE.
4- 5 lb. pork roast
2 large cans sauerkraut
1/2 cup applesauce
1/4 cup brown sugar

Preparation -
Put pork roast in a dutch oven. Add about 1 cup water plus a small amount of salt and pepper. Cover and cook over very low heat about 2 hours. Add sauerkraut, applesauce and brown sugar.Cover and simmer abour 1 to 1 1/2 hours longer or until roast is falling apart. You can also make this in the oven in a covered roasting pan or use foil to cover while roasting. Set oven at about 350 degrees then lower to around 300 when adding sauerkraut.
Note - In order to have good luck for you and your family in the new year, this should always be your first meal of the year. Serve this as you first dinner every January 1st!
Note - This is also a good crockpot meal. Just add everything at once and cook for 5 to 6 hours on low. I often use the sauerkraut that comes in bags. It's not quite as salty.
The kind the dumplings are used with is cooked cooked on top of the stove in a pot.
